Bay Brasserie's kitchen sources its materials from the West Country, with fresh fish and shellfish hauled in from Cornish ports to appear in mains such as roast cod fillet with squid and vegetable compôte and seaweed salsa, or grilled brill with brown shrimps, tomato and samphire. Cornish lobster comes grilled with garlic and herbs or thermidor sauce. Fans of local meat have plenty to get their teeth into - perhaps pan-fried pigeon breast with figs, chard and Pernod jus, while roast rump of lamb gets the support of onions and anchovy, smoked aubergine and potato cake. Baked dark chocolate and cardamom tart with crème fraîche sorbet could provide the finale.
