The old stone inn used to be a staging post for coaches on the Great North Road and is nowadays an informal dining pub. Within are beams, stone walls, rugs on dark wood floors and caramel-coloured leather dining chairs. Regional produce is the backbone, with meat and vegetables from the nearby Burghley Estate, and the kitchen balances up-to-date ideas with the more traditional. Scorched ham hock with piccalilli, pea purée and toast has a nice balance of flavours. Main courses include seared halibut with red chard and sautéed greens in sauce Véronique , and proceedings conclude strongly with plum and pear Tatin and vanilla ice cream.
