Sweeping views of the Firth of Forth and St Monans harbour can get dramatic when winter waves surge over the sea wall, but the proximity of the sea is a reminder of the business here: serving seafood with an exciting modern spin. Chef-patron Craig Millar applies well-honed techniques to his produce to deliver precise, Asian- and European-influenced dishes. Sea trout with oyster soup and miso caramel might be followed by cod fillet with saffron and mussel broth and gnocchi. The short menus also offer some meat dishes - perhaps a main course of braised veal cheek with mash and spring onions - and puddings include pannacotta with strawberries and 'puff candy'.
