In the hotel's Seasons restaurant, a predominantly white colour scheme, with lightwood flooring, flowers on the tables and comfortable leather chairs, creates a coolly elegant atmosphere, appropriate surroundings for some polished cooking. Pink slices of duck breast fanned on a reduced jus, served with earthier leg confit, parsnip purée and roasted vegetables, is a well-considered main course, and could follow something like grilled mackerel fillets, moist and bursting with flavour, cut by pickled vegetables. A decent choice of bread, all made on the premises, is offered, and puddings include nicely presented vanilla pannacotta flavoured with lavender accompanied by seasonal berries.
