At this gorgeous creeper-clad Georgian manor house on the north Cornish coast, the refurbished Valley Restaurant has a clean-lined contemporary look. The menu sets off with pressed pork with velvety celeriac purée, haricot beans, pickled baby carrots and watercress. Main courses draw on local fish landed at St Agnes - crispy-skinned sea bass is partnered with tiger prawn tortellini, fennel purée and potato terrine - but there may also be a two-way serving of local duck, involving breast and a spring roll packed with confit meat, matched with potato fondant, dates and julienned vegetables. To finish, lemon pannacotta appears alongside pistachio sponge and blackcurrant sorbet.
