The Milestone has created a real splash on Sheffield's food scene in the last couple of years. And that is hardly surprising when you consider its back-to-basics ethos of taking the finest produce from local allotments and farms (including its own herd of rare-breed pigs) and bringing it all together in no-nonsense modern dishes that are big on flavour. The kitchen goes about its work with a passion that allows no short cuts, making everything in-house from organic breads to ketchup. Start with home-cured duck ham with spiced red cabbage and gin and tonic jelly, then follow with pig's head with mash, cornichon gravy and confit shallots, and finish with a steamed orange sponge served with custard, orange oil and orange curd. The setting for all of this highly commendable culinary activity is a revitalised Victorian inn in one of the city's oldest industrial areas, a refreshingly unpolished sort of place with a pared-back modern look of bare wooden floors, mismatched chairs and tables, and hues of peppermint, coffee and cream.
