A grounding in the classical French repertoire is apparent, with the kitchen following a modern British route. Chicken and tarragon mousse is a first-rate rendition, complemented by pickled radish and cucumber ribbons, while another starter is seared scallops with crispy bacon and pea velouté. Clearly defined flavours are hallmarks, seen in main courses of braised pork belly with brown onion jus, cauliflower purée and shallots, or duck breast with raspberry gel, fondant potato and baby vegetables. End with deconstructed lemon meringue pie.
