Petworth may be known for antiques but this red-brick former pub is firmly rooted in the 21st-century. All sorts of ideas find their way on to the menus, from a starter of fennel gravad lax paired with salmon rillettes, quail's egg, and apple and endive salad, to a main course starring a spanking-fresh fillet of grey mullet with saffron potato, leek chowder, fish soup, and wild garlic croûtons; local meat fans might go for a fillet mignon of Storrington pork with grapes and Pommery mustard, pommes boulangère, asparagus and black pudding crumble. To finish, there's a spot-on vanilla pannacotta with a compôte of seasonal berries and a crunchy almond tuile.
