The principal restaurant at Thoresby has undergone a restyling. Now known as the Blue Grill, it has a more informal feel, despite the blue silk damask wall coverings, and is equipped with a grill menu that embraces today's range of pedigree beef - Wagyu, USDA and local - as well as pork cutlets and breasts of corn-fed chicken. Steamed lobsters are on hand for the surf-and-turf platters. There are neat inventive touches alongside the hunks of protein, with Asian-spiced cauliflower and pak choi accompanying the braised pig's cheek, or perhaps a main-course salad of roast pigeon with parsnip pur?e, scorched spring onions and hazelnuts. Extensive listings of sides and sauces make for much happy mixing and matching, and by the sweet stage, the kitchen aims to twang your nostalgia strings with sharing platters of fairground treats - candyfloss, marshmallows, ice cream cones, doughnuts and toffee apples. It all takes place, a little incongruously, in a huge palatial Victorian hall built amid gardens by Repton and parkland laid out by 'Capability Brown'.
