Richard Bainbridge took over the reins in spring 2015 and subsequently won the 2015 Great British Menu serving starter and dessert to the WI, so diners can be assured of exciting 21st-century food that's brimful of revelations, courtesy of stimulating combinations of excellent materials. A starter of suckling pig is served in its own broth with broad beans, scorched Baby Gem lettuce, quark cheese, green beans and mushrooms, ahead of a summery main course matching locally caught wild sea trout with turnip, passionfruit, yoghurt, lemon and Jersey Royals. To finish, there's a vibrant pudding of hay-baked pannacotta with raspberries, elderflower, honeycomb and dill granité.
