This handsome Georgian manor house is magnificently sited in a 500-acre estate in the heart of the Blackwater Valley. The open fires, antique mirrors and glittering chandeliers all evoke a bygone age of gracious living. Diners have a choice: there's the timeless elegance of the Presidents' restaurant under the gaze of former Irish presidents; the renovated Victorian Turner Conservatory, where white drapes and candlelight lend a touch of romance; or The Library. William O'Callaghan, the chef-proprietor, masterminds the kitchen, his menu reflecting the top quality produce supplied almost entirely by the estate; seasonal vegetables, fruit and herbs from the walled garden, free-range eggs from their own hens and ducks, lamb and pork from the farm, and fish from the river that runs through the estate. The impressive cooking is underpinned by classical French themes, with flavourful dishes displaying high skill, balance, and plenty of enthusiasm. There might be escalope of halibut with rosemary-scented polenta and pearl onion sauce, or wild mallard duck with Jerusalem artichoke mousse and wild sloe sauce, with caramelised apple tarte Tatin and Longueville apple brandy ice cream to finish. Peripherals like canapés, breads and petits fours hold up the style through to the end.
