Superb views over to the Cromarty Firth and Black Isle from a Baronial castle complete with mini turrets and gables makes for a memorable spot. Once the family home of the Mackenzie clan, the hotel is set in mature private grounds and does not lack for authentic atmosphere on the inside either - a stone fireplace takes centre stage in the discreet, candlelit restaurant, set against red walls and generously-sized linen-clad tables, while antiques and period features are resplendent throughout the hotel. During dinner traditional Scottish music plays and local produce plays a leading role in dishes that are modernised with clever techniques and some nice little touches in the presentation. Start with Dalmore-cured Shetland salmon with cucumber, tomato jelly, herbs and quail's egg, before moving on to sirloin of Highland beef with a mushroom tarte Tatin, roast plum tomato and onion rings.
