The Cormorant occupies a roost above the estuary, as a seat on the sunny terrace confirms. A pastel-hued dining room with linen-clad tables is the setting for Mediterranean-style cooking such as chargrilled mackerel with pepper and fennel escabèche, prawn fritters and tomato gel, or chicken terrine with butternut purée, roasted hazelnuts and something the menu calls 'pickled smijis', possibly renamed shimeji mushrooms. Cornish produce is in evidence throughout, from glorious shellfish to pollock with lemon mash and sautéed bok choy, or a pork assiette comprising roast loin, confit belly and black pudding, served with sweet potato purée. At dessert, go Caribbean with pineapple Tatin and coconut ice cream.
