Standing in 1600 acres of grounds, including a picturesque loch, Culcreuch Castle has all the medieval accoutrements that could be desired. Country-house cooking with some imaginative touches is the approach. For example, pan-seared scallops next to a small crispy skinned and boned chicken wing and piece of crackling that hides a small column of charred soft leek is a lovely take on the classic 'Cock-a-Leekie'. Elsewhere, a deceptively complex Culcreuch lamb with peas, mint and sheep's milk showcases the estate's produce and a caramel chocolate sphere with quenelle of coconut ice cream makes for a wonderful end to a meal.
