The views of Edinburgh Castle certainly give a sense of place to this slick, modern dining option in the Sheraton Grand Hotel. The restaurant and bar have floor-to-ceiling windows and a cool, classy finish. The lunch and dinner menus have a sharp focus on Scotland's fine produce in their crowd-pleasing medley of modern ideas. A fine version of chicken liver pâté comes with blood orange jelly, while Gressingham duck breast is partnered with a faggot of braised leg meat, celeriac fondant, sprout leaves and bramble jus. Finish with a creative combo of gin consommé with liquorice ice cream, lemon cream and bitter salted chocolate.
