Set amid the glorious landscape of the Scottish Borders near Peebles, the only remaining aspect of the erstwhile run-down village boozer is its name. Chef-patron Patrick Bardoulet pulled the place up by its bootstraps with a top-to-toe refurbishment back in 2005, since when the classy restaurant with rooms has established itself as a foodie destination to be reckoned with. The focus of its culinary efforts is Bardoulet's restaurant, a plushly-classical pillared dining room with flourishes of flamboyance in its lush fabrics, coffee, claret and gold colour scheme, and ornate gilt-framed mirrors that wouldn't look out of place in Louis XIV's boudoir. Patrick's wife Vivienne heads up a switched-on front-of-house team who keep things moving at the right pace, while the main man at the stoves deploys razor-sharp contemporary French technique on a larder bursting with superb Scottish ingredients. There is an unarguable logic to the way flavours are put together in dishes that thrill with a vibrant creativity, although simple menu descriptions give little away. Proceedings might begin delicately with carpaccio of smoked scallops teamed with spiced mango and 'exotic' sauce, or crab and avocado with crustacean jelly, Jerusalem artichoke and lobster bonbon, then crank up the flavours into the more full-throttle territory of lamb loin and sweetbreads with gingerbread, beetroot, Comté cheese, gnocchi and vanilla jus. Fabulous artisan cheeses served with honeycomb, quince purée and oatcakes are the alternative to sweet-toothed endings such as mandarin soufflé with champagne sorbet.

We had a wonderful experience from beginning to end; from the canapes and aperitifs, through courses each more sumptuous than the last, to the petits fours with our coffee. The staff were friendly and informative, making us feel welcome and ensuring we were comfortable without feeling intrusive. We had a very reasonable bottle of Chateau Musar to go with our meal, and were very satisfied. Flawless!

My wife and I celebrated our anniversary with a visit to the Horseshoe Inn and I cannot praise it highly enough. The staff were superbly professional and courteous, the food was out of this world, and the attention to detail and relaxed surroundings made this a dining experience we will never forget. Highly recommended.

Though the food is good, the wine is expensive, the service is poor and slow at the end. The cheese board choice has a limit of 4, which they don't tell you until it's too late. They insisted on deposit at reservation for a family meal and the deposit was not deducted from the final bill. Had we not spotted it we would have been overcharged. A disapointing end with unsympathetic staff.
