In the heart of Exmoor, Tarr Farm is a Tudor inn immediately above the Tarr Steps bridge. There's a palpable sense that each dish knows what it's about, as when glazed spatchcocked quail comes with potato salad for a full-flavoured opener, or when a bounty of shellfish - clams and prawns as well as mussels - go into classic marinière. Fish shows up well at main too, for grilled John Dory and crayfish bonne femme with orange-soaked raisins, while rump of moorland lamb arrives with dauphinoise, shallots and confit garlic in Madeira jus. A perfectly creamy pannacotta offset with the sharpness of stewed blueberries makes a great finish.
