Centrally positioned on St Stephen's Green, The Shelbourne was built in 1824. It's undergone a number of makeovers since then, of course, but the scale cannot fail to impress, from the reception area with its domed stained-glass ceiling to the grand staircase. The restaurant has been given a stylish and contemporary look, with fine napery and glassware at well-spaced tables. Steaks and seafood are the main thrust, their provenance exemplary, and there's a separate oyster bar. Otherwise expect home-cured salmon with rocket 'gazpacho' and pickled cucumber, followed by halibut en papillote with a fennel and vanilla broth, or pork tenderloin on a flavourful jus with Puy lentils accompanied by rosemary-sautéed potatoes and vegetables, then a textbook pannacotta with poached rhubarb, or apple tart with vanilla ice cream.

I also agree with the last comment. My dinner here was of a very high standard. I ate at One Pico the night before whom previously had a rating or 3 rosettes, but i felt that the Shelbourne was of equal standard. I have to admit though it is hard to not let ambience and decor influence your dining experience

The 1 rosette award here does not do this restaurant justice ,it is easily a 2 rosette , I should know having followed this guide for years .
The Chef named here is no longer the chef , the food was superb , it was simple ,tasty with good Summer ingredients all round , perfect for residents of the hotel but for outsiders also , stick to the set menu and please ignore this redundant 1 Rosette award .
I am certain AA will be amending that any time soon , well I hope so.
