The Millstream benefits greatly from its lovely location in the curve of a stream running through the harbourside village of Bosham, near Chichester. Built of red brick and flint, the building was originally three 17th-century workmen's cottages, and has since spread its wings to become a traditional, comfortable hotel. On a balmy evening, the fabulous lawned gardens with ducks quacking along the millstream make the perfect spot for drinks, or you could join the yachting crew in the convivial bar. Polished staff preside over the summery, smartly-turned-out restaurant, where top-class local materials star on frequently-changing menus. The kitchen stays abreast of modern trends whilst also keeping traditionalists happy, so dinner could begin with warm rabbit and chicken terrine with parsnip purée, caper dressing and soda bread, and continue with bream fillet partnered with shellfish foam, crushed potatoes with crab and spinach, while meatier offerings might include beef fillet with wild mushroom sauce, bone marrow, and truffled potato purée.
