A top-drawer retreat and country club in Norfolk's spreading acres, Barnham Broom is one for the golfers. Changes were afoot in 2011, with a few dozen more guest rooms being added, wholesale refurbishment of the public spaces, and a conservatory extension for the golf course-facing Flints Restaurant. The kitchen offers a repertoire of seasonally led, brasserie-style dishes. Start with crab terrine, avocado purée and tomato fondue, followed by duck leg confit, served with sticky red cabbage and sauté potatoes in mustard sauce. Desserts try out some modern twists, such as an assiette of chocolate that features a 'millefeuille' of dark chocolate mousse, a 'raviolo' of chocolate ganache and delicate chocolate jelly.
